Recipe for Easter - Josh's Creme Egg Brownie

 

Last week, when we introduced you to our Superstar Josh, we promised you a special Easter recipe from him… And here it is.

A fun Easter bake that all the family can get involved in.

Cream Egg Easter Brownie

 
 

Josh’s Creme Egg Easter Brownie
(serves 6-8)

Ingredients;

  • 4 Creme eggs (Cut these in half and keep them in the fridge)

  • 6 eggs

  • 550g caster sugar

  • 270g dark choc, 70% cocoa

  • 270g butter

  • 170g plain flour

  • 80g cocoa powder

 

Method

1. Preheat your oven to 170 degrees

2. In a suitable bowl, combine chocolate and butter and melt together over a Bain-Marie

3. Whisk together your caster sugar and eggs until the mixture is pale and fluffy. Using a stand mixer will make the process easier, especially for stage 5.

4. In a separate bowl, sift together your flour and cocoa powder.

5. Once your butter mixture has melted, pour this into the egg and sugar mixture, keeping the mixer running on slow.

6. Now add your flour mix in 2 separate increments.

NB- It is important not to over mix your brownie at this point as you want a fudgy mixture rather than a super aerated cake-like batter.

7. Pour your brownie mix into a lined baking tray. (A 25cm by 25cm tin works well for this recipe.)

8. Cook for 15 minutes.  

9. Remove from the oven and carefully push in your creme eggs, cut side up into the brownie tray, spaced apart.

10. Return to the oven for 5 minutes.

11. Remove from the oven and allow to rest in a fridge overnight before turning out and cutting.

12. Enjoy.
